Purple carrot pickles within a week

Purple carrots are such a beautiful colorful vegetable, it's a shame they aren't generally available in stores. If you cut them, they only become more beautiful because of their beautiful whit and yellow core. So nice to have a vegetable garden where you can grow these kinds of rainbow vegetables. If you don't have a vegetable garden, you can find these beautiful purple tuber at a well-stocked greengrocer.


Many vegetables lose their beautiful color if you let them ferment for a little longer. But beetroot and purple carrot contain so much color that this is not the case, perfect vegetables if you can also enjoy those colorful pots.


Beets and carrots may contain quite a lot of sugars, which the healthy lactic acid bacteria enjoy even more. This means tthe pressure on your jar may increase a little faster, especially whilst temperatures are starting to rise again.


Therefore, start burping your fermentation jar every day as soon as you start to see bubbles. To burp, open the jar briefly with one hand on the lid. Open only slightly untill you hear a siss due to the carbon dioxide escaping, and then immediately close the jar again. If you are afraid you might forget this, or are you simply too busy? Then use a jar with an airlock, then the overpressure happens automatically and you don't have to worry about it.
