Do you know those days in autumn when the sun is shining outside, and after working in the garden or a long walk, you sit down by a fire to warm up. On days like these, I really need a warm lunch of comfort food. As a fermentista, I always have a jar of old kimchi, which is too sour, but I definitely don't want to throw it away. (yes you are right, that is how my fermentation station gets full). One of the simplest dishes to make with it are these delicious kimchi pancakes.
How nice it is to have a shelf full of different kimchis on on days like these.
